This was my first time making it, and I really liked it. The flavor was wonderful, but after making it once, I would personally make one real-life adjustment next time: more lemon cream.
The original version works and tastes great, especially if you like a lighter dessert. But if you want fuller cream layers, a prettier top, and enough cream to sandwich every graham cracker layer properly, I would use the optional creamier version included below.
That way, you can choose what fits your table and lifestyle best.

Original Recipe
This is the lighter version of the recipe. It has a fresh lemon flavor, plenty of blueberries, and a thinner cream layer.
Original Ingredients
For the Lemon Cream Filling
- 1 package cream cheese, softened
- 1 cup powdered sugar
- 1 tablespoon lemon zest
- ⅓ cup fresh lemon juice
- 1 teaspoon vanilla extract
- 1 small container whipped topping, thawed
For the Layers
- 1 box graham crackers
- 2 cups fresh blueberries
- Extra lemon zest, optional
- Extra whipped topping, optional
Amanda’s Real-Life Creamier Version
After making this once, I would personally make extra lemon cream next time.
The original version had enough blueberries and enough graham crackers, but I felt a little light on the cream. I wanted more cream between the layers, especially over the blueberries before adding the next graham cracker layer.
The original texture of the graham crackers was perfect, but I’d like a little more lemone cream… I think the graham crackers should be sandwiched between the cream but there wasn’t enough with the original recipe to do this…I don’t think it hurt the flavor necessarily…it was AMAZING! But I have a hunch doubling the cream will make it that much better.
Use this version if you want fuller layers, a prettier top, and more lemon cream throughout the dessert.
Creamier Filling Ingredients
For the Lemon Cream Filling
- 2 packages cream cheese, softened
- 2 cups powdered sugar
- 2 tablespoons lemon zest
- ⅔ cup fresh lemon juice
- 2 teaspoons vanilla extract
- 1 large container whipped topping, thawed
For the Layers
- 1 box graham crackers
- 1 large container fresh blueberries
- Extra lemon zest, optional
- Extra whipped topping, optional
Which Version Should You Choose?
Choose the original version if you want a lighter dessert with a thinner lemon cream layer.
Choose Amanda’s creamier version if you want more filling between each layer, more cream on top, and a softer cake-like texture after chilling.
Both versions are good. The creamier version is simply the adjustment I would make after trying it the first time.
Instructions
- In a large mixing bowl, beat the softened cream cheese until smooth.
- Add powdered sugar, lemon zest, lemon juice, and vanilla extract.
- Mix until creamy and well combined.
- Gently fold in the whipped topping until the lemon cream filling is light and smooth.
- Spread a thin layer of lemon cream filling in the bottom of a 9×13 dish.
- Add a single layer of graham crackers over the cream.
- Spread a layer of lemon cream over the graham crackers.
- Sprinkle blueberries over the lemon cream layer.
- If using the creamier version, spread a thin layer of lemon cream over the blueberries before adding the next graham cracker layer.
- Repeat the layers until the dish is full, using this pattern: cream, graham crackers, cream, blueberries, and more cream if you have enough.
- End with lemon cream on top.
- Cover and refrigerate for at least 4 hours, or overnight for the best texture.
- Before serving, top with extra blueberries, lemon zest, or whipped topping if desired.

Make It Your Own
This recipe is easy to adjust based on what you like and what you have on hand.
Use vanilla wafers instead of graham crackers for a softer, sweeter layer.
Swap blueberries for raspberries, blackberries, or sliced strawberries.
Add a little extra lemon zest if you want a stronger lemon flavor.
Use cheesecake pudding mixed into the filling if you want it extra rich.
Serve it in small cups or jars for individual portions.
Add a few crushed graham crackers on top right before serving for texture.
